Tomato + Cucumber Salad

Recipe provided by Chef Crusco Catering in Austin, TX. Ingredients – Salad
  • 2 Heirloom Tomatoes 🍅 – cut into wedges
  • 2 Cucumbers – cleaned, peeled halfway and cut into 1/4 inch slices
  • 1/4 Red Onion- sliced very thin and chilled in ice water
  • Baguette Croutons – cut into 1/2 inch cubes, dress with EVOO/salt/pepper and roast at 400 degrees until golden
  • EVOO & Balsamic Vinegar – for dressing
  • Sea Salt & fresh ground Pepper – to taste
Directions:
  1. To make the salad, add tomatoes and cucumbers to a plate or platter. Garnish with the red onions & croutons.
  2. Dress all the vegetables with EVOO and Balsamic Vinegar. Season with salt and pepper. Enjoy!
